Quick and Easy Stir Fry
  • 2 tbsp coconut oil
  • Handful of cashew nuts - broken into peices
  • 2 small green chillies
  • 1 clove garlic
  • 3 cups baby bok choy - washed, ends trimmed and chopped into bite size peices
  • 3 cups bean sprouts
  • 1 cup chopped tofu
  • Salt to taste
     
  1. Heat the oil in a pan and add cashews, garlic and green chillies. Fry for about 1 minute until cashews start to brown and garlic starts to soften.
  2. Add tofu and stir together for a couple of minutes.
  3. Add bok choy, bean sprouts and salt and stir fry until bok choy starts to wilt.
  4. ENJOY! :)

Spicy Okra

Here's what's on the menu today in our home: Spicy Okra. It's very simple and easy to make and is a delicious side dish.  You can buy fresh okra from the Indian Grocery Store in your town or you can buy them frozen from the regular grocery store.
  • 1 medium red onion - sliced into thin strips
  • 1 pound okra (either fresh or frozen). If you are using fresh okra, clean them with a damp paper towel, trim the ends and slice them lenthwise into thin strips.  By the way, okra has a decency to reduce as it cooks.
  • 1 clove garlic - chop finely
  • 2 tbsp coconut oil
  • 1 tsp cumin seeds
  • 1/4 tsp turmeric powder
  • 1 tsp dried chilli powder (you can substitute cayenne pepper, cajun seasoning or any other spice that you like)
  • salt - to taste
  1. Heat the oil in a pan and add the cumin seeds, onionsand garlic and sautee them until they are soft.
  2. Add the sliced okra and stir for 2 minutes until well mixed with the onions.
  3. Add all the seasonings in any order -turmeric, chilli powder (what ever spices you are using), salt.
  4. Turn the heat all the way down and cover the pan.
  5. Keep stirring the okra every minute or so to prevent sticking to the bottom of the pan until cooked thoroughly
